Plain Greek yogurt and chia seeds form a creamy base for a gently cooked berry compote. Cooling the compote before layering protects the yogurt’s texture and keeps the finished parfait safely chilled.

Ingredients
- 1 cup plain Greek yogurt, kept refrigerated
- 2 tablespoons chia seeds
- 1 cup mixed berries, fresh or frozen
- 2 tablespoons water
- 1 to 2 tablespoons honey or maple syrup, to taste
- 1 teaspoon fresh lemon juice
- ¼ teaspoon vanilla extract
- ¼ cup granola, optional and added just before serving
Prepare the components
- Stir the Greek yogurt and chia seeds in a clean bowl until evenly combined. Cover and refrigerate for at least 20 minutes while the compote cooks and cools.
- Put the berries and water in a small saucepan over medium heat. Bring to a gentle simmer and cook for 5 to 7 minutes, stirring and lightly crushing the berries, until the fruit is soft and the juices coat the spoon.
- Remove from the heat. Stir in the honey or maple syrup, lemon juice, and vanilla. Transfer the compote to a shallow clean bowl so it cools more quickly. Do not layer hot fruit onto refrigerated yogurt.
- When the compote is no longer warm—ideally 70°F (21°C) or below for immediate assembly—divide half the yogurt between two jars. Add half the compote, then repeat the layers.
- Serve at once, or cover and refrigerate. Add granola only at serving time so it stays crisp.

Contains milk. Granola may contain wheat, tree nuts, peanuts, sesame, soy, or milk, and packaged yogurt can include additional ingredients. Read each label and consider cross-contact. Plant-based yogurt changes the allergen and texture profile and does not make the dish allergy-safe.
Ingredient variations
Frozen berries can go directly into the saucepan and may need 1 to 2 extra minutes. Maple syrup is the plant-based sweetener choice, but a parfait is vegan only when the yogurt, granola, and all other ingredients are also verified as vegan.
Refrigeration and make-ahead limits
Keep yogurt and the assembled parfait at 40°F (4°C) or below. Refrigerate within 2 hours of preparation. For best texture, use assembled parfaits within 2 days; keep granola separate. The berry compote alone can be refrigerated for 3 to 4 days. Freezing an assembled dairy parfait is not recommended because yogurt may separate and fruit releases liquid. Discard a parfait left unrefrigerated for more than 2 hours.
