Ingredients
- 1 cup old-fashioned rolled oats
- ½ cup smooth peanut butter
- ⅓ cup maple syrup or honey
- ¼ cup ground flaxseed
- ⅓ cup dark chocolate chips
- 2 tablespoons chia seeds, optional
- 1 teaspoon vanilla extract
- ¼ teaspoon fine salt
Make the bites
- Stir the oats, ground flaxseed, optional chia seeds, and salt in a large bowl so the fine ingredients are evenly distributed.
- Add the peanut butter, maple syrup or honey, and vanilla. Stir firmly until no dry pockets remain. Fold in the chocolate chips.
- Let the mixture stand for 5 minutes. It should hold together when squeezed. If it crumbles, mix in peanut butter 1 teaspoon at a time. If it is too sticky to shape, add oats 1 tablespoon at a time.
- Portion level tablespoons and roll them into 16 balls, about 1¼ inches wide. Place them on the lined tray.
- Refrigerate for at least 30 minutes, until the bites are firm enough to lift without flattening. Transfer to an airtight container and keep refrigerated.

Contains peanuts. Depending on the brands used, oats and chocolate may contain or contact wheat, milk, soy, tree nuts, sesame, or other allergens. “Gluten-free” is appropriate only when every relevant product is labeled accordingly and cross-contact conditions suit the diner. Sunflower-seed butter changes the flavor and does not by itself make the recipe allergy-safe.
Ingredient choices
