Garlic, rosemary, thyme, lemon, butter, tomatoes, and spinach provide the seasoning and pan accompaniment for this whole roast chicken. A thermometer—not color or elapsed time—determines when the bird is ready.

Ingredients

  • 1 whole chicken, 3½ to 4 pounds (1.6 to 1.8 kg), giblets removed
  • 4 tablespoons (56 g) unsalted butter, softened
  • 1 tablespoon olive oil
  • 4 garlic cloves, finely minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon sweet paprika
  • 1 teaspoon finely grated lemon zest
  • 1 teaspoon fine salt
  • ½ teaspoon black pepper
  • 1 lemon, quartered
  • 1 cup cherry tomatoes
  • ½ cup (120 ml) chicken broth
  • 3 cups loosely packed spinach

Roast, verify, and serve

  1. Heat the oven to 375°F (190°C) with a rack in the lower-middle position. Keep raw poultry and its packaging away from produce and serving dishes. Do not wash the chicken. Pat it dry with paper towels and discard them immediately.
  2. Mix butter, olive oil, garlic, rosemary, thyme, paprika, lemon zest, salt, and pepper. Loosen the breast skin gently with a spoon and spread about one-third of the butter beneath it; rub the remainder over the outside.
  3. Place lemon quarters inside the cavity without packing them tightly. Tie the legs loosely. Set the bird breast-side up on the roasting rack and arrange washed tomatoes below or around it. Wash hands and sanitize every surface and utensil that touched raw chicken.
  4. Roast without opening the oven for 50 minutes. Begin checking temperature, then continue in 10-minute intervals as needed. The chicken is done only when a food thermometer reads at least 165°F (74°C) in the innermost thigh, innermost wing, and thickest breast without touching bone.
  5. Transfer the chicken to a clean carving board, tent loosely, and rest for 15 minutes. Never return cooked poultry to a plate or board that held it raw.
  6. While the chicken rests, add broth to the roasting pan and bring the pan juices and tomatoes to a full simmer on the stovetop if the pan is burner-safe; otherwise transfer them to a saucepan. Simmer 3 minutes, add spinach, and cook 2 minutes until wilted. Keep hot.
  7. Remove the lemon and carve the chicken on the clean board. Divide chicken and the hot tomato-spinach mixture among four plates.

Remove remaining meat from the carcass and refrigerate it with the vegetables within 2 hours in shallow containers. Use within 3 to 4 days. Freeze cooled portions for up to 2 months for best quality and thaw in the refrigerator. Reheat meat and vegetables to 165°F (74°C). Do not leave the roast at room temperature beyond 2 hours, or 1 hour above 90°F (32°C).
