These single-serving lasagnas are simply irresistible. 1 lasagna makes two servings each serving is two weight watchers points! Our version is lightened up by using wonton wrappers, egg whites, fat free cottage cheese and fat free mozzarella cheese, and or substitute spinach for the asparagus if that’s what you have on hand. You can also wrap and freeze the lasagnas for a fabulous and hearty dinner at any time. Just thaw and reheat when you’re ready for supper.

Ingredients

  • fat free mozzarella cheese
  • ½ cup s
  • Egg whites
  • 1 large uncooked
  • Dried oregano
  • ¾ tsp
  • Kosher salt
  • ¼ tsp or to taste
  • Black pepper
  • ¼ tsp freshly ground, or to taste
  • Canned crushed tomatoes
  • 12 oz with onion and garlic
  • Marinara Sauce
  • 1/4 cup
  • Fat free cottage cheese
  • 1/2 cup
  • Fresh basil
  • 2 Tbsp
  • Nutritional yeast
  • 1 Tablespoon

Instructions

  1. Preheat oven to 375°F.
  2. Cut the three wonton wrappers in half -so that you have six wrappers to layer.
  3. Meanwhile, combine mozzarella, cottage cheese , egg whites, and oregano in medium bowl; set aside.
  4. Add tomatoes and marinara sauce together and stir to combine; set aside.
  5. Slice wontons in half widthwise, and then cut each half into 2 pieces so you have 4 equal-size pieces from each noodle.
  6. Generously spray baking dish with nonstick spray. Place 1 wonton wrapper on bottom top with cheese mixture. Repeat layering 2 more times to form 3 layers of wonton wrappers, cheese, tomato marinara sauce. Place final wonton wrapper on top and sprinkle each with nutritonal yeast.
  7. Cover lasagnas tightly with foil and bake 20 minutes; uncover and cook until browned on top, about 5 minutes more. Remove from oven; let cool 3 minutes.
