I found a recipe for a Nutter Butter ice box cake but wanted to make a healthier, more WW friendly version and I did! Based on 16 servings, each slice is 4 points so not bad at all compared to the original recipe.

Ingredients

  • – 8 oz fat free cool whip
  • – 4 medium bananas
  • – 2 boxes sugar free instant vanilla pudding
  • – 4 cups fat free milk
  • – 12 Nutter Butter cookies can be reduced if preferred
  • – 1 cup PB2 Powder

Instructions

  1. Using a stand mixer, combine instant pudding, milk, pb2 powder and half of the cool whip until smooth
  2. Line 6 cookies on the bottom of an 8×8 dish
  3. Add half of the peanut butter mixture on top
  4. Cut up bananas and line on top of first layer
  5. Add the rest of the peanut butter mixture on top
  6. Layer 6 more cookies
  7. Add other half of cool whip on top
  8. Refrigerate for an hour or until ready to eat đŸ€
